Studies on Consumption of Food Chemicals in Korea

Abstract
Consumption status of food chemicals in Korea are studied.
1) 103 items of food chemicals were observed 1 January 1971 to 30 June 1972.
2) 15 items of food chemicals were home products supplied by domestic source.
3) 78 items of food chemicals were imported.
4) 10 items of food chemicats were supplied by both, home products and imported goods.
5) Consumed amount of 20 selected food chemicals was estimated. Sodium nitrate, glucono-deltalactone, calcium sulfate and calcium chloride were in short status of its consumptlon, But deficiencies of these items were filled by the mixed substitute preparation of each and its natural substitutes.
6) AF_(2) and potassium metabisufite were in surplus status.
7) Glycerine fatty acid ester, sodium hydrogen solfite, sodium hyposulfite, sorbic acid and its salt, B.H.T., B.H.A., diluted benzoyl peroxide, ammonium sulfate, sodium glutamate, sodium saceharin, benzoic acid and its salt, salicylic acid, p-oxybenzoic acid and propionic acid salts had no deficiency of supply.
8) For the purpose of reference, content of AF_(2) and nitrite in food was measured.
Nitrite was founded trace-66.7 ppm as NO_(2)- in hams, trace-30.7ppm in sausages, and negative in fish sausages.
AF_(2) was founded 1.36-3.18 PPm in hams, and 0.44-2.74 ppm In sausages.
